Light and fluffy, Fiadone is a delicious lemon-flavored cheesecake traditionally served at Corsican dinner tables after the main meal. Easy to make and low in calories, this melt-in-your-mouth dessert is made of brocciu, a fresh goat’s or sheep’s milk cheese, eggs, and lemon. Once cooked, it retains a somewhat crumbly and moist texture while a fresh lemon flavor gives it a lift.

Light and creamy, Fiadone is a classic Corsican delicacy. Traditionally, it was made in winter, when the juicy brocciu cheese is produced, but you can just as well enjoy it in the summer months by simply replacing brocciu with brousse or ricotta.

Although old and time-tested, the recipe is very simple and the cake is easy to make.

You can serve it with fresh fruit or a fruit coulis and for the ultimate Corsican experience pair it with a glass of delicious chilled Muscat de Cap Corse.

FIADONE- CLASSIC CORSICAN DESSERT

Ingredients

  • 500 grams of fresh brocciu cheese (you can substitute with ricotta cheese)
  • 4 eggs
  • 125 grams of sugar
  • 1 vanilla pod (you can use vanilla extract or vanilla sugar)
  • 2-3 tbsp. of cornstarch (optional)
  • finely grated zest of 1 lemon

Instructions

Preheat the oven to 180°C and grease an 8-inch baking pan. Whisk together eggs, sugar, lemon zest and vanilla in a bowl until fluffy, then slowly add brocciu and mix until the ingredients are well combined. Pour the mixture into the prepared pan and bake until the top is golden brown at the edges.

Notes

Allow to cool and chill before serving.
